Chicken Paprikash
This is a rich Hungarian dish where the chicken is cooked until tender in a delectable flavorful paprika sauce. It is the ultimate comfort food for cold rainy weather!
Chicken Paprikash

Ingredients
- 4 chicken breasts
 - 1/2 onion finely chopped
 - 6 garlic cloves minced
 - 4 Roma tomatoes finely chopped
 - Salt and pepper to taste
 - 3 tbsp sweet paprika
 - 4 cups chicken stock
 - 3/4 cup sour cream (I used Greek yogurt instead for a healthier option).
 - Chives or cilantro for garnish
 
Instructions
- Heat a large nonstick pan on high.
 - Sprinkle the chicken breasts with salt and pepper and add them to the pan.
 - Lower the heat to medium and cook the chicken for about 5 minutes on each side until golden.
 - Remove from the pan and set aside.
 - Add the onion and cook it in the juice that was released from the chicken. Stir occasionally until it caramelizes.
 - Stir in the garlic and cook for another minute until fragrant.
 - Add the chopped tomatoes and cook for 5 minutes.
 - Sprinkle the mixture with salt and pepper to taste then with the paprika. Stir until combined.
 - Return the chicken breasts to the skillet.
 - Pour the chicken broth. Bring to a boil and let simmer covered until tender.
 - Mix the yogurt or sour cream with 1/2 cup liquid removed from the pan. Whisk until well combined and smooth.
 - Remove the cooked chicken from the pan and stir in the yogurt mixture.
 - Whisk until it comes to a boil then let simmer until it thickens.
 - Return the chicken to the pan and cook the whole thing for another 5 minutes.
 - Serve the chicken paprikash topped with a dollop of Greek yogurt or sour cream and drizzled with chives or cilantro.
