Ingredients

For the wafers:
  • 1 1/4 cups flour
  • 1/2 cup cocoa powder
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 10 tbsp cold unsalted butter cut into small cubes
  • 1 tsp vanilla
  • 1/2 tsp salt
For the filling:
  • 4 tbsp unsalted butter at room temperature
  • 1 cup powdered sugar
  • 1 1/2 tsp milk of choice
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

Make the wafers:
  1. In the bowl of a stand mixer, combine the flour with the cocoa powder, sugars, butter, vanilla and salt.
  2. Beat on low speed until the mixture starts to become crumbly then forms a dough (about 3 minutes).
  3. Transfer the dough onto a clean work surface and pat it with your hands into a flat disc. Wrap it with plastic paper and place it in the fridge for 1 hour or up to 2 days.
  4. Preheat the oven to 325 degrees F (162 C).
  5. Line 2 baking sheets with parchment paper.
  6. Dust a clean work surface with cocoa powder.
  7. Unwrap the dough and let it soften at room temperature for 5 minutes.
  8. Sprinkle the dough with cocoa powder and roll it with a rolling pin into an 1/8-inch thick circle dusting as needed to prevent sticking.
  9. Use a 1-inch round cookie cutter to cut circles of dough.
  10. Transfer the circles carefully to the prepared sheets spacing them 1 inch apart.
  11. Bake until the cookies are set and firm around the edges (about 10 minutes).
  12. Remove the sheets from the oven and allow the cookies to rest for 30 minutes.
Meanwhile prepare the filling:
  1. In the bowl of a stand mixer, combine the butter with the sugar, milk, vanilla and salt.
  2. Beat until the filling is creamy (about 45 seconds).
  3. Spread 1 tsp of filling onto the underside of a cookie and place a second cookie on top.
  4. Repeat with the remaining cookies.
  5. Serve & enjoy!
