For the wafers:
- 1 1/4 cups flour
- 1/2 cup cocoa powder
- 1/3 cup sugar
- 1/3 cup brown sugar
- 10 tbsp cold unsalted butter cut into small cubes
- 1 tsp vanilla
- 1/2 tsp salt
For the filling:
- 4 tbsp unsalted butter at room temperature
- 1 cup powdered sugar
- 1 1/2 tsp milk of choice
- 1 tsp vanilla extract
- Pinch of salt
Instructions
Make the wafers:
- In the bowl of a stand mixer, combine the flour with the cocoa powder, sugars, butter, vanilla and salt.
- Beat on low speed until the mixture starts to become crumbly then forms a dough (about 3 minutes).
- Transfer the dough onto a clean work surface and pat it with your hands into a flat disc. Wrap it with plastic paper and place it in the fridge for 1 hour or up to 2 days.
- Preheat the oven to 325 degrees F (162 C).
- Line 2 baking sheets with parchment paper.
- Dust a clean work surface with cocoa powder.
- Unwrap the dough and let it soften at room temperature for 5 minutes.
- Sprinkle the dough with cocoa powder and roll it with a rolling pin into an 1/8-inch thick circle dusting as needed to prevent sticking.
- Use a 1-inch round cookie cutter to cut circles of dough.
- Transfer the circles carefully to the prepared sheets spacing them 1 inch apart.
- Bake until the cookies are set and firm around the edges (about 10 minutes).
- Remove the sheets from the oven and allow the cookies to rest for 30 minutes.
Meanwhile prepare the filling:
- In the bowl of a stand mixer, combine the butter with the sugar, milk, vanilla and salt.
- Beat until the filling is creamy (about 45 seconds).
- Spread 1 tsp of filling onto the underside of a cookie and place a second cookie on top.
- Repeat with the remaining cookies.
- Serve & enjoy!
