  • 1/2 cup unsalted butter, cold and cut into cubes
  • 3 tbsp ice water
For the apple filling:

  • 3 tbsp flour
  • 1 tbsp fresh lemon juice
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
For the topping:
  • 1 cup flour
  • 1 cup brown sugar
  • 1/2 cup roasted walnuts, chopped
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted

Instructions

Make the dough:
  1. In a food processor, combine the flour with the sugar and salt.
  2. Add the butter and pulse until the mixture resembles white sand (about 20 sec).
  3. Add the ice water then pulse again until a dough begins to form.
  4. Turn the dough out onto a clean work surface and pat it into an oval disk.
  5. Wrap it with plastic paper, then refrigerate for at least 30min.
  6. Once the dough has chilled, set it on the counter to soften for 5 min.
  7. Dust a clean work surface with flour, unwrap the dough and roll it out with a rolling pin into a 12-inch circle.
  8. Place it over a 9-inch pie pan, pressing into the bottom and sides, then use scissors to trim around the edges of the dough, leaving a half-inch overhang.
  9. Tuck the overhang of the pie under itself, creating a thick edge around the rim of the pan.
Make the filling:
  1. Peel and core the apples, then cut them into thin slices.
  2. Place them in a bowl and add the brown sugar, flour, lemon juice, vanilla, cinnamon, ginger, nutmeg, and salt. Set aside.
Make the topping:
  1. In a small bowl, combine the flour, brown sugar, walnuts, and salt.
  2. Add the melted butter and stir everything together until it resembles wet sand.
Bring it all together:
  1. Preheat the oven to 350 degrees F (176 C).
  2. Pour the apple filling into the crust and spread it evenly with a spatula.
  3. Spread the topping over the apple mixture pressing it into the apple layer slightly.
  4. Cover the pie lightly with aluminum foil. Bake in the heated oven for 20 min, then remove the foil and continue baking for another 40 min until golden brown.
  5. Remove from the oven and let cool slightly before serving.
