Kafta Meatloaf
Rich and savory, this meatloaf is a winner for any big family gathering. Baked on a bed of vegetables with a flavorful tomato sauce, it is the ultimate comfort food for the Holiday season.

Ingredients
- 1 1/2 pounds extra lean ground beef (or lamb, turkey…)
 - 1 onion peeled and finely chopped
 - 1 cup fresh parsley leaves finely chopped
 - 2 egg whites
 - 2 tbsp balsamic vinegar
 - 1 tsp ground cinnamon
 - 1 tsp allspice
 - 1/2 tsp nutmeg
 - Salt and pepper to taste
 - 2 potatoes peeled and cut
 - 2 cups frozen peas
 - 1 cup peeled and diced tomatoes
 - 2 cups tomato sauce
 
Instructions
- Preheat the oven to 400 degrees f (200 C).
 - In a bowl, mix the meat with the onion, parsley, egg whites, vinegar, the spices, and salt and pepper to taste.
 - Mix well until combined. Shape into a loaf (around 3x 12 inches).
 - Place the loaf in the center of a 9x13x2-inch baking dish.
 - Spread the potatoes all around it.
 - Sprinkle the frozen peas over the potatoes and top with the diced tomatoes.
 - Pour the tomato sauce evenly over the loaf and the vegetables.
 - Cover the baking dish tightly with foil paper and place it in the heated oven.
 - Bake for 1 hour then remove the foil and continue to bake for 20 minutes.
 - Remove from the oven and spoon some more sauce from the sides over the loaf.
 - Gently stir the remaining sauce around it to make sure it is well blended.
 - Cover the dish again and let rest for 15 minutes before slicing and serving.
