Fragrant Prawn Farro
This dish is hearty and wholesome. Nutty rustic farro cozies up with zesty prawns and aromatic basil to yield a delicious meal. The melting cheese adds a luscious and satisfying texture that takes it to a new level.
Fragrant Prawn Farro

Ingredients
- 1 pounds shelled and deveined prawns
 - 4 garlic cloves minced
 - Salt and pepper to taste
 - Zest and juice of 1 lemon
 - 1 cup Farro
 - 4 cups water
 - 3 tbsp shredded Parmesan cheese
 - 4 oz sliced mozzarella cheese
 - 1 cup fresh basil leaves torn
 - A drizzle of olive oil
 
Instructions
- Heat a large skillet on high.
 - Lower the heat to medium and add the prawns.
 - Cook for 2 minutes on each side until the color changes.
 - Add the minced garlic, the salt and pepper and stir until fragrant.
 - Add the lemon zest and juice and turn off the heat.
 - Let rest covered while the farro cooks.
 - Place the farro and the water in a saucepan and bring to a boil.
 - Lower the heat and let simmer uncovered for 30 minutes until the farro is tender.
 - Drain the farro and add it to the prawns mixture.
 - Add the Parmesan and mozzarella cheese.
 - Turn on the heat again and stir everything until well combined and until the cheese starts to melt.
 - Add the basil and mix well. Remove from the heat.
 - Serve warm while the cheese is melting.
 - Sprinkle with some olive oil and more basil.
