Potato Salad
This healthy potato salad is packed with fresh ingredients and bursting with Mediterranean flavors. It will stand out on any table and will pair beautifully with any entée.

Ingredients
For the potatoes
- 4 medium russet potatoes peeled and quartered
- Salt to taste
- Juice and zest of 1 lemon
- 2 garlic cloves minced
For the vegetables
- 4 tomatoes chopped
- 4 cucumbers diced
- 1 green onion chopped
- 1 cup fresh mint
- Juice and zest of 1 lemon
- 2 garlic cloves minced
- 2 tbsp red vinegar
- 2 tbsp olive oil
- 1 tsp dried mint
- 1 tsp sumac
- Salt and pepper to taste
Instructions
- Place the potatoes in a pot filled with water and bring to a boil.
- Add a pinch of salt and let simmer for 30 minutes until the potatoes are tender.
- Drain the potatoes and transfer them to a bowl.
- Mash well with a potato ricer then add the lemon juice and zest and the minced garlic.
- Knead well with your wet hands adding water as you go to get a very smooth mixture.
- Grease a round mold or bowl of your choice with some olive oil and transfer the mashed potatoes to it making sure the top is smooth.
- Mix the vegetables in a separate bowl and add the lemon juice and zest, garlic, vinegar, oil, dried mint and sumac. Add salt to taste.
- Reverse the mashed potatoes on a serving platter.
- Make a hole in the center using a big spoon.
- Place the vegetable medley inside the hole.
- Drizzle the potato salad with some more olive oil and sprinkle with dried mint and sumac.
