Fava Beans Spinach Burgers

Packed with flavor and nutrients, these delicious burgers are good on their own, tucked in a bun or a lettuce leaf, or towering over a bed of greens in a salad.

They are savory, filling and will give you a good boost of spring energy!

Fava Beans Spinach Burgers

Ingredients

  • 6 cups frozen spinach leaves
  • 1 cup double shelled fava beans
  • 1 boiled russet potato peeled and cubed
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 1 tsp ground coriander
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 3 tbsp fresh cilantro leaves chopped
  • 6 tbsp almond meal or flour
  • 1 egg whisked

Instructions

  1. Preheat the oven to 400 degrees F ( 200 C).
  2. Line a baking sheet with parchment paper and spray it with some olive oil.
  3. Make sure the spinach is completely defrosted and squeeze it hard with your hands to get rid of any liquid. Chop finely.
  4. Place the fava beans in a food processor and blitz a few times until coarsely chopped.
  5. Add the diced potato and the spinach leaves. Follow by the oil, the garlic, coriander, cumin, turmeric, red pepper and salt and pepper to taste.
  6. Mix once more until combined and transfer to a bowl.
  7. Add the chopped cilantro, the almond meal or flour and the egg.
  8. Knead with your hands until well mixed. Wet your hands and shape the mix into thick patties. Place them on the prepared baking sheet.
  9. Place the sheet in the fridge for 30 minutes then bake in the heated oven for 25 to 30 minutes.
  10. Take out of the oven and let rest for 10 minutes
