Green Goddess Gazpacho

This green goddess gazpacho is exploding with green bounty in bloom during this season. Nutritious and refreshing, it is silky and creamy yet light without any cream added!

Green Goddess Gazpacho

Ingredients

  • 2 cucumbers sliced
  • 1 cup yogurt
  • 1 avocado peeled and pitted
  • Juice and zest of 1 lemon
  • Juice and zest of 1 lime
  • 2 garlic cloves minced
  • 2 cups mixed herbs( basil, mint, cilantro, parsley, basil)
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Place all the ingredients in a blender and blitz until smooth and creamy.
  2. Taste and adjust the seasoning.
  3. Add water to reach your desired consistency.
  4. Chill for at least 2 hours before serving.
  5. Pour in little soup bowls or glasses.
  6. Drizzle with olive oil and garnish with herbs, and thinly sliced cucumber or avocado.
  7. Serve and enjoy!
