Cozy White Beans Soup

Ingredients

  • 1 onion chopped
  • 2 garlic cloves minced
  • 3 big carrots peeled and sliced
  • 3 celery stalks sliced
  • 1 sweet potato peeled and diced
  • 1 tsp dried thyme
  • 4 cups cooked cannellini beans
  • 4 cups vegetable broth
  • 2 tbsp tahini sauce (optional)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley leaves for garnish

Instructions

  1. Drizzle the chopped onion with olive oil .
  2. Heat a large saucepan on high and add the onion.
  3. Lower the heat and cook stirring occasionally until transparent, then add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the carrots, celery, potato and thyme and cook for 5 minutes.
  5. Add the beans then pour the broth.
  6. Bring to a boil then cover and let simmer for 20 minutes.
  7. Remove 2 tbsp from the broth and mix them with the tahini in a small bowl.
  8. Stir into the soup and cook for an additional 10 minutes.
  9. Add the lemon juice and salt and pepper to taste.
  10. Remove the soup from the heat.
  11. Ladle into soup bowls, sprinkle with parsley leaves, serve and enjoy!
