Cozy Chestnut Soup

Luxurious and velvety, this soup is soothing and comforting. With slight sweet earthy hints from the chestnuts and squash, and warm flavors and aromas from the nutmeg and rosemary, it is ideal for the season.

Ingredients

  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 butternut squash or any other kind of squash peeled, seeds scooped out and diced
  • 1 cup roasted chestnuts peeled
  • 4 cups chicken or vegetable broth
  • 1 tsp nutmeg
  • 1 tbsp dried rosemary
  • Salt and pepper to taste
  • 1/2 cup milk of choice

Instructions

  1. Heat a saucepan on high.
  2. Drizzle the onion with some vegetable oil and add to the saucepan.
  3. Cook stirring until transparent then add the garlic and cook until fragrant.
  4. Stir in the diced butternut squash and the roasted chestnuts.
  5. Add the nutmeg, rosemary and salt and pepper to taste.
  6. Pour the broth and bring everything to a boil.
  7. Cover the pan and let simmer for 30 minutes. Insert a hand mixer into the soup and blitz until smooth and silky.
  8. Stir in the milk and simmer for another 5 minutes.
  9. Ladle the soup into bowls.
  10. Garnish with some chestnuts, serve and enjoy!
