Cozy Chestnut Soup

Ingredients
- 1 onion finely chopped
- 2 garlic cloves minced
- 1 butternut squash or any other kind of squash peeled, seeds scooped out and diced
- 1 cup roasted chestnuts peeled
- 4 cups chicken or vegetable broth
- 1 tsp nutmeg
- 1 tbsp dried rosemary
- Salt and pepper to taste
- 1/2 cup milk of choice
Instructions
- Heat a saucepan on high.
- Drizzle the onion with some vegetable oil and add to the saucepan.
- Cook stirring until transparent then add the garlic and cook until fragrant.
- Stir in the diced butternut squash and the roasted chestnuts.
- Add the nutmeg, rosemary and salt and pepper to taste.
- Pour the broth and bring everything to a boil.
- Cover the pan and let simmer for 30 minutes. Insert a hand mixer into the soup and blitz until smooth and silky.
- Stir in the milk and simmer for another 5 minutes.
- Ladle the soup into bowls.
- Garnish with some chestnuts, serve and enjoy!
