Swiss Chard Butter Bean Soup
This hearty soup is nutritious and packed with plant-based protein and fiber. It is customizable and will be ready in less than twenty minutes.
Swiss Chard Butter Bean Soup

Ingredients
- 1 onion finely chopped
- 4 garlic cloves minced
- 1 tsp turmeric
- 6 cups vegetable stock
- 1 tsp dried mint
- 3 cups Swiss chard leaves chopped
- 1 bay leaf
- 2 sprigs of fresh thyme
- 2 cups cooked butter beans
- Salt and pepper to taste
- Juice of 1 big lemon
Instructions
- Heat a saucepan on high. Add the onion with 1 tbsp water and lower the heat. Cook stirring occasionally for 10 minutes until soft.
- Add the garlic and the turmeric and cook for 1 minute until fragrant.
- Pour the vegetable stock, the dried mint, the Swiss chard, the bay leaf and the thyme sprigs.
- Bring to a boil, cover the pan and let simmer for 20 minutes.
- Add the butter beans and salt and pepper to taste .
- Cook for an additional 10 minutes. Remove the bay leaf and the thyme sprigs.
- Stir in the lemon juice and turn the heat off.
- Ladle the soup into individual bowls, drizzle with more lemon juice and olive oil.
