Swiss Chard Butter Bean Soup

This hearty soup is nutritious and packed with plant-based protein and fiber. It is customizable and will be ready in less than twenty minutes.

Swiss Chard Butter Bean Soup

Ingredients

  • 1 onion finely chopped
  • 4 garlic cloves minced
  • 1 tsp turmeric
  • 6 cups vegetable stock
  • 1 tsp dried mint
  • 3 cups Swiss chard leaves chopped
  • 1 bay leaf
  • 2 sprigs of fresh thyme
  • 2 cups cooked butter beans
  • Salt and pepper to taste
  • Juice of 1 big lemon

Instructions

  1. Heat a saucepan on high. Add the onion with 1 tbsp water and lower the heat. Cook stirring occasionally for 10 minutes until soft.
  2. Add the garlic and the turmeric and cook for 1 minute until fragrant.
  3. Pour the vegetable stock, the dried mint, the Swiss chard, the bay leaf and the thyme sprigs.
  4. Bring to a boil, cover the pan and let simmer for 20 minutes.
  5. Add the butter beans and salt and pepper to taste .
  6. Cook for an additional 10 minutes. Remove the bay leaf and the thyme sprigs.
  7. Stir in the lemon juice and turn the heat off.
  8. Ladle the soup into individual bowls, drizzle with more lemon juice and olive oil.
