Ingredients
- 2 cups cooked quinoa
- 2 cups cooked chickpeas
- 4 big plums pitted and diced
- Zest and juice of 1 lemon
- Zest and juice of 1 lime
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup fresh mint leaves
- 1 cup fresh parsley leaves chopped
Instructions
- Place all the ingredients in a big salad bowl and mix to combine.
