Avocado Peach Caprese
This salad is summer on a platter! Sweet juicy peaches, summery cherry tomato and avocado, fresh aromatic basil and creamy mozzarella come together to yield this vibrant refreshing treat. Serve it with your grilled entrée and enjoy the bounty of the season at its best!
Avocado Peach Caprese

Ingredients
- 2 avocados cut in 2 halves each, pitted and peeled
- 2 peaches pitted and diced or sliced
- 1 cup cherry tomatoes cut in halves
- 4 oz mozzarella cheese cut into cubes or sliced
- Salt and pepper to taste
- Fresh basil
- A drizzle of olive oil
- A drizzle of balsamic vinegar
Instructions
- Place the avocado halves on a platter and hollow the pit area a bit further with a spoon.
- Place the avocado flesh that you removed in a bowl.
- Add the diced peach, the tomatoes, mozzarella , basil and salt and pepper to taste. Mix well and fill the hollowed avocados with the mixture.
- Drizzle with olive oil and balsamic vinegar to taste.
- Serve and enjoy!
