Refreshing Melon Gazpacho
Healthy and cooling, this gazpacho is the perfect balance of savory and sweet. It is packed with nutrients and will keep you hydrated and refreshed on hot weather days.
Refreshing Melon Gazpacho

Ingredients
- 1 cantaloupe peeled, seeded and cubed
- 1 cucumber peeled and diced
- 1 shallot chopped
- 2/3 cup yogurt
- 2 tbsp red wine vinegar
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Place the cantaloupe, cucumber and shallot in the bowl of a food processor with 1/2 cup of water.
- Process until smooth.
- Add the yogurt and the vinegar and process more until incorporated.
- Slowly and while the motor is running, mix in the olive oil.
- Taste and add salt and pepper as you like.
- Chill until you want to serve.
- Pour the chilled soup into cups or glasses, drizzle with more olive oil and sprinkle with fresh mint.
- Serve and enjoy!
