Roasted Carrots with whipped Feta
Roasted sweet rainbow carrots lay on a bed of salty tangy whipped feta cheese to make an elegant and incredibly tasty appetizer or side. The rainbow carrots will illuminate your table with their beautiful fall hues, and the blend of flavors will for sure delight and impress your guests!
Roasted Carrots with whipped Feta

Ingredients
- 2 pounds rainbow carrots
- 2 tbsp olive oil
- Salt and pepper to taste
- 3/4 cup crumbled feta
- 1/2 cup plain Greek yogurt
- 1 garlic clove minced
- 1 tsp fresh parsley
- 1 tsp dried mint
- 2 tsp zaatar mix
Instructions
- Preheat the oven to 400 degrees F (200 C).
- Peel the carrots and place them on a baking sheet. Toss them with olive oil, salt and pepper.
- Roast in the heated oven for 30 minutes.
- Place the crumbled feta in the bowl of a food processor then add the yogurt, garlic, parsley and mint and blitz until smooth.
- Spread the whipped feta mixture on a serving platter.
- Remove the carrots from the oven and let cool slightly.
- Place the carrots over the whipped feta.
- Sprinkle with the zaatar, serve with your main dish and enjoy!
