Chickpea Stew
Soft tender chickpeas are simmered in a savory tomato sauce then topped with crumbled feta and broiled until golden. The ultimate one-pan vegetarian stew that yields a nutritious meal for the whole family in less than 30 minutes!
Chickpea Stew

Ingredients
- 1 onion chopped
- 4 garlic cloves minced
- 3 cups strained or chopped tomatoes
- 1 cup vegetable broth
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- 3 cups cooked chickpeas
- 3 cups fresh spinach leaves
- Juice of 1 lemon
- 1/2 cup crumbled feta cheese
- Some zaatar for drizzling
Instructions
- Heat a large oven- safe pan on high.
- Drizzle the onion with some olive oil and add to the pan. Lower the heat to medium and sauté the onion stirring frequently until transparent (around 5 minutes).
- Add the garlic and cook for 1 minute until fragrant.
- Stir in the tomatoes, vegetable broth, oregano, paprika and salt and pepper.
- Bring to a boil then cover the pan and simmer for 20 minutes.
- Stir in the chickpeas and cook uncovered for 15 minutes.
- Add the spinach and cook until wilted (about 2 minutes).
- Remove from the heat and stir in the lemon juice.
- Sprinkle the feta cheese all over the top of the stew.
- Turn on the oven broiler and place the pan on the upper rack and broil for about 3 minutes until the cheese is golden brown.
- Remove the pan from the oven, sprinkle with some zaatar, serve with some rice, quinoa or toasted pita bread. Enjoy!
