Chickpea Stew

Soft tender chickpeas are simmered in a savory tomato sauce then topped with crumbled feta and broiled until golden. The ultimate one-pan vegetarian stew that yields a nutritious meal for the whole family in less than 30 minutes!

Chickpea Stew

Ingredients

  • 1 onion chopped
  • 4 garlic cloves minced
  • 3 cups strained or chopped tomatoes
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 3 cups cooked chickpeas
  • 3 cups fresh spinach leaves
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese
  • Some zaatar for drizzling

Instructions

  1. Heat a large oven- safe pan on high.
  2. Drizzle the onion with some olive oil and add to the pan. Lower the heat to medium and sauté the onion stirring frequently until transparent (around 5 minutes).
  3. Add the garlic and cook for 1 minute until fragrant.
  4. Stir in the tomatoes, vegetable broth, oregano, paprika and salt and pepper.
  5. Bring to a boil then cover the pan and simmer for 20 minutes.
  6. Stir in the chickpeas and cook uncovered for 15 minutes.
  7. Add the spinach and cook until wilted (about 2 minutes).
  8. Remove from the heat and stir in the lemon juice.
  9. Sprinkle the feta cheese all over the top of the stew.
  10. Turn on the oven broiler and place the pan on the upper rack and broil for about 3 minutes until the cheese is golden brown.
  11. Remove the pan from the oven, sprinkle with some zaatar, serve with some rice, quinoa or toasted pita bread. Enjoy!
