Green Beans Bruschetta

Scrumptious fresh chopped tomatoes mixed with aromatic basil, extra virgin olive oil, zesty lemon juice and garlic lay on a bed of crispy blanched green beans – a side dish that is vibrant, nutritious and definitely a crowd pleaser!

Green Beans Bruschetta

Ingredients

  • 1 pound green beans trimmed
  • 1 1/2 cups cherry tomatoes cut in halves
  • 1 1/2 cups fresh basil leaves chopped
  • Zest and juice of 1 lemon
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • Olive oil to taste
  • 1/2 tsp sumac (optional)

Instructions

  1. Bring a pot of water to a boil and have a large bowl of ice water next to it.
  2. Drop the green beans in the boiling water and cook for 4 to 5 minutes.
  3. Drain and immediately transfer to the ice water bowl. Keep for one minute to stop the cooking process.
  4. Place the green beans on your serving platter and prepare the bruschetta.
  5. In a bowl, mix the tomatoes with the basil, lemon zest and juice, garlic, salt and pepper to taste and olive oil to taste.
  6. Mix well then spread over the green beans in the serving platter.
  7. Sprinkle with the sumac if using, serve and enjoy!
