Savory Mushroom Fig Crêpes

Ingredients
For the crêpes
- 2 eggs
- 2 tbsp butter
- 1 1/2 cups milk warmed
- 1 tbsp sugar
- 1 cup whole wheat flour
- 1/2 tsp sea salt
For the filling
- 1 tbsp butter
- 1/2 onion finely chopped
- 1 tbsp fresh thyme leaves
- 2 cups mushrooms of your choice trimmed and finely chopped
- Salt and pepper to taste
- 1 cup arugula or spinach
- 1/2 cup shaved Gruyère cheese
- 8 fresh figs quartered
Instructions
Make the crêpe batter
- In a medium bowl, whisk the eggs with the melted butter, milk and sugar.
- Fold in the flour and salt.
- Transfer the mixture to a measuring cup, cover with plastic wrap and refrigerate for at least 30 minutes or up to overnight.
Prepare the filling
- Heat a large nonstick skillet and add the butter.
- When melted, add the onion and cook stirring occasionally until soft.
- Stir in the thyme leaves and cook for a minute until fragrant.
- Add the mushrooms and salt and pepper to taste.
- Cook until golden and tender (around 8 minutes).
- Stir in the arugula or spinach and toss until wilted.
- Transfer the mixture to a bowl and mix in 1/4 of the cheese and the figs.
Make the crêpes
- If you have a crêpe pan (usually 9 inch), use it or else you can use the same skillet you used to make the filling.
- Set the skillet over medium heat and lightly grease it with some butter.
- Pour 3 tbsp of the batter into the center of the skillet and rotate it holding the handle to spread the batter across the whole surface.
- Cook for 2 minutes then use a spatula to flip the crêpe on the other side.
- Cook for 20 seconds then slip it onto a plate.
- Grease the skillet again and repeat the same process with the remaining batter.
Bring it all together
- Fill each crêpe with 3 tbsp of the mushroom mixture and sprinkle with some cheese.
- Fold as you like: a burrito, an envelope or a triangle.
- Serve warm and enjoy!
