Savory Mushroom Fig Crêpes

Delicate, melt-in-your mouth crêpes envelop a delicious sweet savory filling and yield a simple chic meal that brings a taste of France home to your kitchen.

Savory Mushroom Fig Crêpes

Ingredients

For the crêpes
  • 2 eggs
  • 2 tbsp butter
  • 1 1/2 cups milk warmed
  • 1 tbsp sugar
  • 1 cup whole wheat flour
  • 1/2 tsp sea salt
For the filling
  • 1 tbsp butter
  • 1/2 onion finely chopped
  • 1 tbsp fresh thyme leaves
  • 2 cups mushrooms of your choice trimmed and finely chopped
  • Salt and pepper to taste
  • 1 cup arugula or spinach
  • 1/2 cup shaved Gruyère cheese
  • 8 fresh figs quartered

Instructions

Make the crêpe batter
  1. In a medium bowl, whisk the eggs with the melted butter, milk and sugar.
  2. Fold in the flour and salt.
  3. Transfer the mixture to a measuring cup, cover with plastic wrap and refrigerate for at least 30 minutes or up to overnight.
Prepare the filling
  1. Heat a large nonstick skillet and add the butter.
  2. When melted, add the onion and cook stirring occasionally until soft.
  3. Stir in the thyme leaves and cook for a minute until fragrant.
  4. Add the mushrooms and salt and pepper to taste.
  5. Cook until golden and tender (around 8 minutes).
  6. Stir in the arugula or spinach and toss until wilted.
  7. Transfer the mixture to a bowl and mix in 1/4 of the cheese and the figs.
Make the crêpes
  1. If you have a crêpe pan (usually 9 inch), use it or else you can use the same skillet you used to make the filling.
  2. Set the skillet over medium heat and lightly grease it with some butter.
  3. Pour 3 tbsp of the batter into the center of the skillet and rotate it holding the handle to spread the batter across the whole surface.
  4. Cook for 2 minutes then use a spatula to flip the crêpe on the other side.
  5. Cook for 20 seconds then slip it onto a plate.
  6. Grease the skillet again and repeat the same process with the remaining batter.
Bring it all together
  1. Fill each crêpe with 3 tbsp of the mushroom mixture and sprinkle with some cheese.
  2. Fold as you like: a burrito, an envelope or a triangle.
  3. Serve warm and enjoy!
