Falafel Cake
Do you love Falafel but are looking for a healthier not fried alternative? This loaf is the answer. Loaded with nutritious goodness and oven baked, it is still scrumptious and filling exactlly like that wrap you get on the street soaked in tahini sauce, pickles and vegetables but without the guilt!
Falafel Cake

Ingredients
- 2 cups cooked chickpeas
- 4 garlic gloves minced
- 1 onion chopped
- 2 eggs whisked
- 1 cup fresh cilantro leaves
- 1 cup fresh parsley leaves
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp baking powder
- 1/2 cup chickpea flour
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees F (200 C).
- Grease a loaf pan and line it with parchment paper.
- Place all the ingredients in the bowl of a food processor and pulse until smooth and well combined.
- Transfer the mixture to the prepared loaf pan and bake in the heated oven for 30 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool at room temperature.
- Release the falafel loaf from the pan and transfer to a serving platter.
- Slice and serve at room temperature drizzled with tarator( tahini sauce with lemon and garlic), pickles and vegetables of your choice.
