Stuffed Potato Hummus Domes

The soft creamy shell is loaded with a medley of savory mushrooms, roasted walnuts, cranberries and aromatic herbs and spices. A healthy delectable combination that will no doubt please your palate!
Stuffed Potato Hummus Domes

Ingredients
For the shell
- 4 cups cooked chickpeas
- 2 medium potatoes boiled and peeled
- 1/4 cup tahini sauce
- Juice of 1 lemon
- 1 tsp paprika
- 1/2 tsp white pepper
- Salt to taste
For the filling
- 1 onion sliced into crescents
- 2 garlic cloves minced
- 1 pound mushrooms thinly sliced
- 1/4 cup roasted walnuts chopped
- 1/2 cup dried cranberries
- 1 tsp cinnamon
- 1 tsp ground cloves
- Salt to taste
- 1/2 cup tahini sauce
- Zest and juice of 1 lemon
- 1/2 cup fresh cilantro leaves
Instructions
To make the shell
- Place the chickpeas, potatoes, tahini, lemon juice, paprika, white pepper and salt in the bowl of a food processor and mix until well combined and you get a dough.
- Set aside to rest.
Make the filling:
- Heat a saucepan on high and drizzle the onion with olive oil.
- Place in the heated pan and cook on medium heat until caramelized.
- Add the garlic and cook until fragrant.
- Stir in the mushrooms and sauté for 5 minutes.
- Add the walnuts, cranberries, cinnamon, cloves and salt.
- Slowly add the tahini and the lemon juice followed by the cilantro leaves. Mix well.
- Remove from the heat and let cool.
Make the dome
- Oil a 14-inch (or two 7-inch) dome shaped bowl and line it with plastic paper.
- With your wet hands, spread the potato chickpea dough over the bottom and around the edges leaving some dough to cover the top.
- Place the filling inside the shell and cover the top with the remaining dough.
- Cover with plastic wrap and place in the fridge for at least 2 hours or up to overnight.
- Turn the bowl upside down on a serving platter and gently remove the plastic wrap.
- Smooth out the surface with your wet hands.
- Drizzle the dome with olive oil and garnish with chickpeas, cilantro, cranberries...
- Serve at room temperature and enjoy!
