Cauliflower Bake
Even if you think that you are not much of a cauliflower fan, you should try this bake. The florets are roasted until golden, and then they bathe in a rich savory tomato sauce speckled with aromatic fresh basil and grape tomatoes. The highlight is the melted gooey mozzarella cheese and the golden crust that make this bake the ultimate comfort food!
Cauliflower Bake

Ingredients
- 1 cauliflower head cored and cut into florets
- 1 cup tomato sauce
- 2 tbsp tomato paste
- 1/3 cup milk or cream
- 1/3 cup grated Parmesan cheese
- 1 cup shredded mozzarella divided
- 1 cup grape tomatoes halved
- 1 cup fresh basil leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 425 degrees F (220 C).
- Drizzle the florets with olive oil and sprinkle with salt and pepper.
- Place on a greased oven tray and roast for 30 minutes until golden.
- Meanwhile, in a saucepan, mix the tomato sauce with the tomato paste, milk or cream, and Parmesan cheese.
- Heat on medium then once the cauliflower is roasted, mix it in with the sauce.
- Stir in half the mozzarella, half the tomatoes and half the chopped basil. Taste and add salt and pepper to your liking.
- Pour the mixture into a baking dish.
- Lower the oven temperature to 350 F (175 C).
- Top the cauliflower mixture with the remaining mozzarella and tomatoes.
- Bake in the heated oven for 30 minutes then broil for 5 minutes until golden.
- Remove from the oven and let sit for 15 minutes.
- Sprinkle with the remaining basil, serve and enjoy!
