Loaded Hummus
Creamy dreamy Hummus is loaded with a medley of soft, crunchy, savory and aromatic toppings, then drizzled with extra virgin olive oil and a pinch of zaatar blend for a final touch; a platter that will impress your guests at any gathering!
Loaded Hummus

Ingredients
- 4 cups cooked hummus
 - 10 tbsp tahini
 - 2 garlic cloves minced
 - Juice of 1 lemon or more to taste
 - Salt to taste
 - 1 tomato diced (or a handful of cherry tomatoes halved)
 - 2 cucumbers diced
 - 1 handful of pomegranate seeds
 - 2 tbsp cooked chickpeas peeled and halved
 - 4 olives pitted and chopped
 - 1 tbsp toasted pine nuts or almonds
 - 2 tbsp toasted pistachios chopped
 - 1/4 cup fresh mint leaves chopped
 - A drizzle of olive oil
 - A pinch of zaatar mix
 
Instructions
- Place the cooked chickpeas in a saucepan and cover with enough water. Add 1 tsp salt and simmer for 10 minutes.
 - Drain the chickpeas over a bowl to reserve the water.
 - Place the warm chickpeas in a food processor with the tahini, garlic, lemon juice and salt to taste.
 - Add a couple of ice cubes and about 2 tbsp of the saved water (you can add more as you go). Blitz until smooth then taste and adjust the flavors to your liking.
 - Spread the hummus on a serving platter creating a well in the center or any other design.
 - Top with all the remaining ingredients ending with the olive oil and zaatar. You can also be creative and personalize your hummus the way you like.
 - Serve with sliced pita bread or crackers of choice. Enjoy :)
