Loaded Hummus

Creamy dreamy Hummus is loaded with a medley of soft, crunchy, savory and aromatic toppings, then drizzled with extra virgin olive oil and a pinch of zaatar blend for a final touch; a platter that will impress your guests at any gathering!

Loaded Hummus

Ingredients

  • 4 cups cooked hummus
  • 10 tbsp tahini
  • 2 garlic cloves minced
  • Juice of 1 lemon or more to taste
  • Salt to taste
  • 1 tomato diced (or a handful of cherry tomatoes halved)
  • 2 cucumbers diced
  • 1 handful of pomegranate seeds
  • 2 tbsp cooked chickpeas peeled and halved
  • 4 olives pitted and chopped
  • 1 tbsp toasted pine nuts or almonds
  • 2 tbsp toasted pistachios chopped
  • 1/4 cup fresh mint leaves chopped
  • A drizzle of olive oil
  • A pinch of zaatar mix

Instructions

  1. Place the cooked chickpeas in a saucepan and cover with enough water. Add 1 tsp salt and simmer for 10 minutes.
  2. Drain the chickpeas over a bowl to reserve the water.
  3. Place the warm chickpeas in a food processor with the tahini, garlic, lemon juice and salt to taste.
  4. Add a couple of ice cubes and about 2 tbsp of the saved water (you can add more as you go). Blitz until smooth then taste and adjust the flavors to your liking.
  5. Spread the hummus on a serving platter creating a well in the center or any other design.
  6. Top with all the remaining ingredients ending with the olive oil and zaatar. You can also be creative and personalize your hummus the way you like.
  7. Serve with sliced pita bread or crackers of choice. Enjoy :)
